Senkin Shuzo (Domaine Senkin) is the oldest “kura” (brewery) in Tochigi prefecture, dating to 1806. Two brothers, representing the 11th generation, have been responsible for giving a modern twist to traditional sake. Elder brother Kazuki Usui, a former wine sommelier, is applying his wine knowledge to refine the sake style at Senkin. He believes that sake can express terroir (local characteristics), like wine does.
Bordeaux wine making method - Assemblage is used to create balanced sake without compromising the unique features of each rice varietal. Fukurotsuri process is conducted to collect every single drop from each rice varietal and blend together. Elegant aroma with grape, pear and white flower. Delicate and refine but with silky texture. Dignity and grace from Yamadanishiki, wildness from Kamenoo and strength from Omachi.
