With over 140 years of history, Uijin uses both the local sakanishi rice and spring water from Mt. Aono and produce the sake using the most traditional method. Similar reputation to its Jumai Daiginjo, Tsuwano Daiginjo has a fruity nosing while a bit dry on the taste, a very balance Daiginjo which has won a several awards in the past two years of its superior quality.
