Noguchi Naohiko (#農口尚彥) is one of the famous ‘Four Great Nototoji’ (#能登杜氏四天王). He has 70 years experience in sake making and had served as Toji since 1961 at few breweries. At the end of 2017 and age of 84, he setup ‘Noguchi Naohiko Sake Institute’ as his last mission of his Toji career with other 7 young passionate sake makers.
Brewed with Miyama-nishiki rice of 55% polishing rate, the genshu accentuates the rice's unique refreshing texture, with a hint of fruity aroma and acidity from yamahai sake. Goes well with any kind of meal and best served chilled.
