While many varieties of table rice from Hokkaido are famed for its supremely high quality & used at some of the finest Sushi-ya, Sakemai or rice used for sake is hardly cultivated in Hokkaido, given that the extremely harsh conditions during winter.

Kita-Shizuku which hails from Hokkaido is a relatively new sake rice varietal. Limor san, the Head Brewer of Nabeshima sakes produces a gorgeous rendition and expression of this rice varietal. Astounding versatility when it comes to food pairing possibilities.
